Almond Paste

Blanched, ground almonds combined with sugar and glycerin; used in a variety of confections including amaretti cookies; similar to marzipan but is less delicate and not as sweet. Ground kernels of peaches or apricots are often added to enhance the almonds. Almond paste is available in most supermarkets. After opening, wrap tightly and refrigerate. Heating for two or three seconds in a microwave oven can soften hardened almond paste. It should be firm but pliable before using
